Banana Nut Bread

Who else enjoys weekend baking?? Who else needs to do something with their browning bananas??

This is the perfect banana nut bread recipe for you, then!
My mom has been making banana nut bread for years and years.  In college I decided to start making it myself, and now it is almost a habit; any time my bananas get even a little brown, I think time to make banana nut bread!  Then I remember that I can’t eat it all myself, so ask friends to take the extra loaves off my hand.  In Dallas, near by friends would always reap those benefits – now in Atlanta it’s lovely co-workers!

All of these ingredients are something every cabinet should be fully stocked with… pecans and bananas are usually the only two items that need to be picked up at the grocery store for this yummy breakfast bread!

Comfort breakfast bread with banana and toasted pecans.
Ingredients
  • ½ cup chopped pecans
  • 1 tsp. olive oil
  • ½ tsp. salt
  • ½ cup butter
  • 1 cup sugar
  • 2 eggs
  • ½ tsp. vanilla extract
  • ½ tsp. cinnamon
  • ¼ ground cloves
  • 2 cups flour
  • 1 tsp. baking soda
  • 2-3 browned bananas
Instructions
  1. Pre-heat oven to 300 and set butter on top of stove to soften.
  2. Put your chopped nuts on a baking sheet and over with the olive oil and salt. Let toast in oven for 5 minutes.
  3. Cream sugar and butter together.
  4. Add eggs, vanilla, cinnamon, baking soda and cloves. Beat well.
  5. Add in flour a ½ cup at a time and mix well.
  6. Finally mix in the bananas and nuts.
  7. Half way fill three greased mini loaf pans.
  8. Bake for 50 minutes.

Chop, salt, EVOO, and toast those pecans away! (Can you spot my pink sweater reflecting back??)

Butter and sugar are ready to be mixed together! By the way… the mixing tool pictured below is not the most efficient one for this recipe.. but I ruined the right one my putting it in the dishwasher.. lesson learned!

Then mix in your eggs with the other wet ingredients as well as the spices.

Last item into the mixer are the toasted pecans!! And yes.. my pecans are a bit overly toasted.. sad to admit that was the second attempt to get them toasted.. not used to this oven in the new apartment..

This batter is ready for the pre-heated oven at 300 degrees!

I prefer to bake this bread in 3 small pans so you can give extra bread to loved ones!

Make sure your tins are half way filled to leave room for the bread to rise and the tins are easier to put in and out of the oven on a baking sheet!
