Tomato sauce paired with a pan fried cinnamon chicken over white rice is a perfect meal when it is cold outside.

Ingredients
  • 1 Cup Rice
  • 1 Tablespoon Olive Oil
  • 2 Cups Water
  • 4 Tablespoon Butter
  • Boneless Skinless Chicken Breast
  • 2 Tablespoons Cinnamon
  • 1 Tablespoon Cumin
  • Salt and Pepper to Taste
  • 2 Tablespoon Butter
  • 1 Tablespoon Olive Oil
  • 1 Yellow Medium
  • 4 Cloves of Garlic
  • ¼ Cup Red Wine
  • 15 oz Tomato Sauce
  • 15 oz Diced Tomatos - Well drained
  • Salt and Pepper to Taste
Instructions
  1. Put rice, water and a touch of olive oil in a pot over medium heat. Cook until tender and when all of the liquid is absorbed.
  2. Warm a skillet (suggested: iron skillet) on medium heat and melt butter. Add in chicken. While chicken is browning add cinnamon, cumin, salt and pepper. Cook until brown on both sides (8-10 minutes) and set to the side.
  3. While the chicken is browning start chopping your onion and garlic.
  4. Once chicken is removed add in the onions and garlic and allow the onions to turn translucent (~5 minutes) into the same skillet. Make sure not to burn the garlic.
  5. Then pour in the wine and give it about 2 minutes to get rid of the alcohol and soak into the onions.
  6. Add in the tomato sauce and drained diced tomatoes. Bring to a boil.
  7. Add the chicken back into the skillet and let simmer till cooked fully (no pink in the center). Let simmer on low heat for at least 10 minutes then serve over the rice.
